Bar-B-Que Sauce


Bar-B-Que Sauce

Yield: 6 servings

1 c Catsup
1/2 c Onion; finely chopped (dried or pulverized with a food proccessor is best!)
1/3 c Water
1/4 c Butter or oil
1 tb Paprika
1 ts Brown Sugar; heaping
1/2 ts Salt
1/4 ts Pepper
1/4 c Lemon juice or vinegar
1 tb Worcestershire sauce
1 dried chipotle pepper (optional)

1. Heat all ingredients except lemon juice and worcestershire sauce. Bring to a boil.
2. Add lemon juice and worcestershire sauce and heat until hot. Makes about 2 cups.

Substitutions I make: 1 Can Tomato sauce + 2 T. sugar. Slightly less butter, or none at all. The cooked critter seems to produce enough of it's own fat to make up for leaving any out.

Suggestions for use: Pour over Skinned and cleaned Chicken.  Cook in crockpot for about 6-8 hours on low. 4-6 hours on high.

Graham Cracker Crust

Graham Cracker Crust

Yield: 8 servings

Graham crackers (5-1/3 oz) = ground 1+2/3 cup
1/4 c Sugar
1/4 c Plus 2 tb butter or margarine
------------------------------

1. Melt butter or margarine.
2. Combine all ingredients, mixing well. Firmly press crumb mixture evenly over bottom and sides of a 9-inch pieplate. Crust may be used without baking.
3. OR bake at 350 degrees for 7 to 9 minutes. Yield: one 9-inch crust.

Louise's No-Bake Cheesecake

Louise's No-Bake Cheesecake

1 Envelope unflavored gelatine
1/2 c cold water
1/2 c Sugar
1 c Boiling water
2 pk (8 oz ea) cream cheese-softened
1 t Vanilla (opt)
1 9-inch graham cracker crust

1. In a large bowl, mix the unflavored gelatine and cold water.  Set aside to soften for about 5-10 minutes.
2. Add sugar; add boiling water and stir until gelatine is completely dissolved. With electric mixer, beat in cream cheese and vanilla until smooth. Pour into prepared crust; chill until firm, about 2 hours. Top, if desired, with fresh or canned fruit.

Monkey Bread


Monkey Bread

2 cans canned biscuits
1+1/2 tablespoons ground cinnamon
1+1/2 teaspoons ground nutmeg
2/3 cup sugar
3/4 cup pecans -- chopped fine
1/2 cup margarine -- melted
1/2 cup brown sugar
1 tablespoon dried apricots -- minced
1 tablespoon seedless raisins -- chopped
1/2 teaspoon orange peel -- grated

* Use your choice of canned biscuits, usually sold in cans of 8-10 biscuits or cans of 5 giant-sized.

1. In small bowl, mix the spices and sugar. Mix the chopped raisins, minced apricots and chopped nuts in another bowl. Place the nut mixture into the bottom of a lightly greased 10 or 12-inch oven-proof dish or pan.
2. Cut each biscuit into 4 pieces; coat in the sugar-cinnamon mixture. Place the coated biscuits atop the nut mixture, fitting into the pan lightly. Keep stacking until all are used.
Tumbleweed Pottery Monkey Bread Mold3. Melt the margarine; add the brown sugar and orange zest. Pour this very carefully and evenly over the biscuit pieces. Bake in a preheated 375-degree oven for about 20 minutes, checking after 15 minutes.
4. Invert onto serving dish immediately. Serve warm.

Soft Oatmeal Cookies

1/2 c Margarine
1 c Sugar
2 lg Eggs
1 ts Vanilla
1 1/2 c Oatmeal (not inst)
1 1/2 c Flour
1/2 ts Baking soda
1/2 ts Baking powder
1/2 ts Salt
1 ts Cinnamon
1/2 ts Ground allspice
1/2 ts Ground nutmeg
1/4 c Milk
1 c Raisins or dates
1 c Nuts; chopped (Optional)

1. Preheat oven to 350 degrees. Grease some cookie sheets.
2. Combine the butter and sugar in a mixing bowl, and beat until thoroughly blended. Add the eggs and vanilla, and beat until light and fluffy, then stir in the oatmeal. Stir and toss together the flour, baking soda, baking powder, salt, cinnamon and allspice, and add them to the first mixture along with the milk. Beat until completely mixed. Stir in the raisins and nuts.
3. Drop the dough by heaping teaspoonsful onto the prepared cookie sheets, placing them about 2 " apart, and bake for about 12 minutes, or until the edges are brown.  Cool and wrap.

1 can apple slices -- canned (or applesauce)
1 5/8 cups blackberries, frozen or fresh
3/4 cup sugar
3/8 teaspoon nutmeg
1 package yellow cake mix
3/8 cup walnuts
1/2 cup margarine -- melted
----------------------------
1. Spray Cake Pan
2. Arrange undrained apple slices in the bottom of pan
3. Sprinkle with blackberries, Sugar, nutmeg, cake mix, & nuts -- in that order.
4. Drizzle melted margarine over mixture.
5. Bake at 350 degree oven for 1 hour. Serve

1 can pear -- slices
1/4 cup maraschino cherry -- juice
1 cup maraschino cherries
1 can mixed fruit
1 package strawberries, frozen -- whole
2 packages vanilla pudding mix -- instant

1. combine all fruits AND their liquids in a large stainless steal bowl. Sprinkle with pudding mix and stir well. Refrigerate covered overnight.

Sloppy Joes

4 pounds ground beef, extra lean
2 1/2 cups water
3 beef bouillon -- cubes
1/4 cup catsup
1/4 cup mustard
3/8 cup vinegar
2 tablespoons worcestershire sauce
3/8 cup orange juice
3/8 cup brown sugar
1/4 cup paprika
1 teaspoon celery seed
1/4 teaspoon cayenne pepper
1/4 teaspoon garlic powder
1/4 teaspoon black pepper
1/4 teaspoon cinnamon
1 green pepper -- diced
2 tablespoons onion flakes
16 hamburger buns
--------------------------
1. Brown beef with peppers & onions.
2. Add remaining ingredients, except for buns, and bring to a boil. Simmer for 30 minutes ~ serve on hamburger buns.

Mother's Day Sugar Cookies

Mother's Day Sugar Cookies

1/2 c Butter
1 c Sugar
2 Eggs
1 tb Light cream
2 1/2 c Flour
2 ts Baking powder
1/2 ts Salt
1/2 ts Nutmeg
1 ts Lemon juice
1/2 ts Vanilla
-----------------------
1. Cream butter and sugar. Beat in eggs and cream. Add flour mixed withbaking powder, salt and nutmeg.
Then add lemon juice and vanilla, and mix well. Form dough into logs about 1" in diameter. Chill dough for at least an hour. Slice cookies. 
2. Bake at 350^F for about 8 minutes until golden. Do not let cookies get too brown. Decorate as desired Makes 4-5 dozen. Decorate with sprinkles, colored sugar, nuts, chocolate chips, etc.

Potato Salad

4 pounds potato -- unpeeled
1 1/2 tablespoons chives
1 1/2 cups celery -- diced
3/8 cup cider vinegar
1/4 cup pickle relish
4 each egg -- hard cooked
1 cup mayonnaise
1 1/2 tablespoons parsley
2 1/4 teaspoons salt
3/8 teaspoon pepper
----------------------------
1. Boil potatoes, cool & cut into .5" cubes.
2. Add celery & egg slices to potatoes.
3. Mix together remaining ingredients and toss with potato mixture.
4. Chill overnight -- garnish with more parsley & Chives.
