Ingredients<br />
<br />
1 Cups Gluten free all purpose flour<br />
1/4 tsp Salt<br />
1 tsp Cornstarch<br />
1 tsp Baking powder<br />
1/2 Cup Granulated monkfruit or Splenda<br />
1/2 Cup butter, softened to room temperature<br />
1 Egg, at room temperature<br />
1 tsp Vanilla extract<br />
<br />
<br />
<ul>
<li>Pre-heat your oven to 350 degrees and line cookie sheets with parchment paper.</li>
<li>in a medium bowl, mix together the flour, salt, cornstarch and baking powder. Set aside.</li>
<li>In a large mixing bowl, beat the monkfruit and butter with an electric hand mixer until it is light and fluffy and pale in color.</li>
<li>Add in the egg and vanilla and beat until well combined.</li>
<li>Gradually stir in the flour mixture into the butter mixture, stirring just until combined, and the dough forms a ball. </li>
<li>Using a cookie scoop, scoop the dough into balls on the prepared cookie sheet, pressing down until they are about 1/2 inch thick.</li>
<li>Bake until the edges JUST begin to turn golden brown, about 13-14 minutes. They will still feel very soft and unbaked, that is good.</li>
<li>Let them cool on the cookie tray for 5 minutes, and then transfer to a wire rack to finish cooling.</li>
</ul>

<li><span style="color: #002635; font-family: Georgia, Times New Roman, serif;"><span style="background-color: initial; color: inherit; font-family: Georgia, "Times New Roman", serif;">Place the bowl of an electric mixer, or a large glass bowl if using a hand mixer, in the freezer to chill for at least 10 minutes. Whip on low speed while gradually adding Splenda then gradually increase speed as whipped cream thickens. Whip until cream can hold it’s shape but is not lumpy.</span></span></li>
<li><span style="color: #002635; font-family: Georgia, Times New Roman, serif;"><span style="background-color: initial; color: inherit; font-family: Georgia, "Times New Roman", serif;">Spread a thin layer of whipped cream into the bottom of an 8x8” baking dish. Layer in 9 of the cookies, spread on another layer of whipped cream, and then top with 1/3 of the strawberries. Repeat layers - cookies, whipped cream, and berries - two more times to create three layers total (you might have a little extra whipped cream at the end.) Cover dish with saran wrap then refrigerate overnight. When ready to serve, slice then serve immediately.</span></span></li>

<span style="font-family: Georgia, Times New Roman, serif;">Ingredients:</span><br />
<span style="font-family: Georgia, Times New Roman, serif;"><br /></span>
<span style="font-family: Georgia, Times New Roman, serif;">1 cup milk</span><br />
<span style="font-family: Georgia, Times New Roman, serif;">2 teaspoons dried yeast</span><br />
<span style="font-family: Georgia, Times New Roman, serif;">2 teaspoons salt</span><br />
<span style="font-family: Georgia, Times New Roman, serif;">2 large eggs, beaten</span><br />
<span style="font-family: Georgia, Times New Roman, serif;">¼ cup honey</span><br />
<span style="font-family: Georgia, Times New Roman, serif;">½ cup butter, melted</span><br />
<span style="font-family: Georgia, Times New Roman, serif;">3 ½ cups all-purpose flour</span><br />
<span style="font-family: Georgia, Times New Roman, serif;"><br /></span>
<span style="font-family: Georgia, Times New Roman, serif;">Topping and filling:</span><br />
<span style="font-family: Georgia, Times New Roman, serif;"><br /></span>
<span style="font-family: Georgia, Times New Roman, serif;">¾ cup butter, melted, </span><br />
<span style="font-family: Georgia, Times New Roman, serif;">1 ¼ cup brown sugar</span><br />
<span style="font-family: Georgia, Times New Roman, serif;">⅓ cup honey</span><br />
<span style="font-family: Georgia, Times New Roman, serif;">1 teaspoon ground cinnamon</span><br />
<span style="font-family: Georgia, Times New Roman, serif;">½ teaspoon nutmeg</span><br />
<span style="font-family: Georgia, Times New Roman, serif;">½ teaspoon salt</span><br />
<span style="font-family: Georgia, Times New Roman, serif;">1 ½ cups chopped pecans or walnuts</span><br />
<span style="font-family: Georgia, Times New Roman, serif;"><br /></span>
<span style="font-family: Georgia, Times New Roman, serif;">Instructions:</span><br />
<span style="font-family: Georgia, Times New Roman, serif;"><br /></span>
<br />
<ol>
<li><span style="font-family: Georgia, Times New Roman, serif;">In a large bowl combine the flour, yeast, and salt. Set aside.</span></li>
<li><span style="font-family: Georgia, Times New Roman, serif;">In a separate container, mix together the milk, honey, butter. Pop in the microwave and gently heat for a few seconds until the mix is lukewarm and the butter is melting.</span></li>
<li><span style="font-family: Georgia, Times New Roman, serif;">Once the butter has melted whisk in the eggs. You want to make sure the mix isn’t too hot otherwise the eggs will cook.</span></li>
<li><span style="font-family: Georgia, Times New Roman, serif;">Pour the wet mixture into the dry mixture and mix until it forms a dough and all the flour is mixed in. It only takes a minute to mix the dough together.</span></li>
<li><span style="font-family: Georgia, Times New Roman, serif;">Cover with plastic wrap and allow to rest at room temperature until the dough rises for a minimum of 4 hours. After the 4 hours, you can place it in the fridge for up to 4 days.</span></li>
<li><span style="font-family: Georgia, Times New Roman, serif;">For the filling: Mix together melted butter, brown sugar, honey, nutmeg, and cinnamon. Set aside.</span></li>
<li><span style="font-family: Georgia, Times New Roman, serif;">Using a 9-inch cake pan, with a spoon spread half the brown sugar mixture evenly over the bottom and sides. Scatter nuts over the brown sugar mixture and set aside.</span></li>
<li><span style="font-family: Georgia, Times New Roman, serif;">Dust your work surface with flour. Roll out the dough to a ⅛ -inch thick rectangle. As you roll out the dough, make sure there is enough flour to prevent it from sticking to your work surface.</span></li>
<li><span style="font-family: Georgia, Times New Roman, serif;">Evenly spread the remaining brown sugar mixture over the rolled out dough leaving 1 inch around the edge of the dough without filling.</span></li>
<li><span style="font-family: Georgia, Times New Roman, serif;">Starting with the long side, roll the dough into a log. Roll it over until its pinched seam is underneath.</span></li>
<li><span style="font-family: Georgia, Times New Roman, serif;">Using a serrated knife, cut the log into 2 ½ inch rolls (around 8 or 9 pieces). Arrange the rolls over the nuts in the prepared pan, so that the cut edge is facing upward.</span></li>
<li><span style="font-family: Georgia, Times New Roman, serif;">Cover the tin with plastic wrap and allow to rest for 1 hour. During this time they will rise up to meet the tin and become bubbly.</span></li>
<li><span style="font-family: Georgia, Times New Roman, serif;">Once proofed, place the rolls on a baking sheet covered with parchment, in case the caramel bubbles over.</span></li>
<li><span style="font-family: Georgia, Times New Roman, serif;">Preheat the oven to 350 degrees and bake for 30 - 40 minutes, or until golden brown and firm in the center.</span></li>
<li><span style="font-family: Georgia, Times New Roman, serif;">While still hot, run a thin spatula around the outer edge of the pan to release the caramel rolls, and invert immediately onto a serving dish. If you let them set too long they will stick to the pan and will be difficult to turn out. Enjoy warm!</span></li>
</ol>
<span style="font-family: Georgia, Times New Roman, serif;">Notes:<br />If in a hurry it is perfectly okay to use frozen bread dough to speed things up a bit.</span>Weezelhttp://www.blogger.com/profile/04441857346642599256noreply@blogger.com0tag:blogger.com,1999:blog-2195051048135346853.post-35870580488142800192017-07-05T10:10:00.000-04:002017-07-05T10:10:14.989-04:00Lazy Daisy Lasagna<div class="separator" style="clear: both; text-align: center;">

<a href="https://4.bp.blogspot.com/-wRqDNiN-C44/V5YviuOIoqI/AAAAAAAABDI/4pBIJ1fW3zg1mWA7xsuyLNWrIIqjBycLACLcB/s1600/pizzabread.jpg" imageanchor="1" style="clear: left; float: left; margin-bottom: 1em; margin-right: 1em;"><img border="0" height="200" src="https://4.bp.blogspot.com/-wRqDNiN-C44/V5YviuOIoqI/AAAAAAAABDI/4pBIJ1fW3zg1mWA7xsuyLNWrIIqjBycLACLcB/s200/pizzabread.jpg" width="200" /></a></div>
Ingredients:<br />
<br />
2 lbs of Pizza Dough (I use Hannaford's multi-grain dough, but the canned kind is okay too)<br />
2 cups Mozzarella cheese, grated (or your favorite pizza cheese)<br />
1 tablespoon of Italian seasoning<br />
1 tablespoon parsley flakes<br />
1/3 cup olive oil<br />
1 – 8 oz package of pepperoni<br />
1 lb ground beef<br />
1 teaspoon of fresh garlic or garlic powder<br />
1 tablespoon chives (fresh or dried)<br />
10 links of brown and serve breakfast sausage<br />
<br />
Directions:<br />
<br />
<br />
<ol>
<li>Preheat the oven to 350 degrees.</li>
<li>Brown ground beef with garlic and chives - drain & cool.</li>
<li>Cut pizza dough into bite sized pieces add oil and toss so that the oil is spread evenly on each piece of dough.</li>
<li>Cut the pepperoni and sausage into smaller pieces.</li>
<li>Mix all the ingredients in a bowl.</li>
<li>Transfer into a large greased bunt pan. (I usually have enough for a loaf pan also). </li>
<li>Bake for about 30 minutes (or until the top is brown and the center is thoroughly cooked).</li>
<li>Be sure to check it in the middle before you pull it out. If the middle is still not cooked thoroughly - leave it in another 5 minutes at a time until it's done.</li>
<li>Flip over on to a plate while it's still hot.</li>
<li>Serve with a side of red sauce and enjoy!</li>
</ol>
<br />
<br />
Note: This is simple and works great for pot luck meals or small family get-togethers.Weezelhttp://www.blogger.com/profile/04441857346642599256noreply@blogger.com0tag:blogger.com,1999:blog-2195051048135346853.post-83700550921169222832016-04-28T11:59:00.001-04:002016-04-28T11:59:29.176-04:00Louise's Favorite Rhubarb Custard Pie<div class="separator" style="clear: both; text-align: center;">

Rhubarb Custard Pie:<br />
<br />
ingredients :<br /><br />Pastry for Double-Crust Pie (<a href="http://whats-cooking-louise.blogspot.com/2010/01/aunt-gabbys-no-fail-pie-crust.html">Aunt Gabby's Recipe</a>)<br />1 1/2-2 cups sugar<br />1/4 cup all-purpose flour<br />1/2 teaspoon ground nutmeg<br />Dash salt<br />4 cups fresh or frozen unsweetened chopped rhubarb<br />2 slightly beaten eggs<br />2 tablespoons half-and-half or light cream or milk<br />1/4 cup Milk<br />
<br />
directions:<br /><br />
<ol>
<li>On a lightly floured surface, roll out half of the pastry and fit into a 9-inch pie plate. Trim even with rim.</li>
<li>In mixing bowl, combine 1-1/2 to 2 cups sugar, flour, nutmeg, and salt. Add the rhubarb. Gently toss until coated. (For frozen fruit, let stand for 15 to 30 minutes or until partially thawed, but icy.)</li>
<li>In a small bowl, whisk together eggs and cream. Pour over fruit; toss to mix. Transfer to the pasty-lined pie plate.</li>
<li>On a lightly floured surface, roll out remaining dough into a 12-inch circle and cut slits for steam to escape, trim top crust to 1/2 inch beyond edge of pie plate; fold extra pastry under bottom pastry and flute edge. If you like, make leaf cutouts from pastry scraps and place on pie; brush top crust with milk.</li>
<li>To prevent overbrowning, cover edge of pie with foil. Bake in a 375 degree F oven for 25 minutes for fresh fruit (50 minutes for frozen). Remove foil. Bake for 20 to 25 minutes more or until top is golden. Cool on wire rack. Makes 8 servings. </li>

<span style="font-family: Verdana, sans-serif; font-size: large;">Instead of spending $$$ on expensive granola and/or power bars in the questionable section of your local supermarket . . . Try making these yourself. Change up ingredients (like different kinds of fruit, nuts, flavored whey powders, add coconut, etc.). The following is my favorite recipe:</span><br />
<span style="font-family: Verdana, sans-serif; font-size: large;"><br /></span>
<span style="font-family: Verdana, sans-serif; font-size: large;">Ingredients:</span><br />
<span style="font-family: Verdana, sans-serif; font-size: large;"><br /></span>
<span style="font-family: Verdana, sans-serif; font-size: large;">1/3 C unsweetened applesauce</span><br />
<span style="font-family: Verdana, sans-serif; font-size: large;">1/4 C almond butter</span><br />
<span style="font-family: Verdana, sans-serif; font-size: large;">2 T peanut oil</span><br />
<span style="font-family: Verdana, sans-serif; font-size: large;">10 packets of splenda (or 3 T sugar or other sweetener)</span><br />
<span style="font-family: Verdana, sans-serif; font-size: large;">1/4 C agave nectar</span><br />
<span style="font-family: Verdana, sans-serif; font-size: large;">3 large eggs</span><br />
<span style="font-family: Verdana, sans-serif; font-size: large;">1/2 t vanilla</span><br />
<span style="font-family: Verdana, sans-serif; font-size: large;">3/4 C whole wheat flour (feel free to experiment with some of the newer flours on the market, like almond, coconut, or soy)</span><br />
<span style="font-family: Verdana, sans-serif; font-size: large;">1/2 t baking soda</span><br />
<span style="font-family: Verdana, sans-serif; font-size: large;">1 t nutmeg</span><br />
<span style="font-family: Verdana, sans-serif; font-size: large;">1/2 t salt</span><br />
<span style="font-family: Verdana, sans-serif; font-size: large;">1/4 t ginger</span><br />
<span style="font-family: Verdana, sans-serif; font-size: large;">1/2 C vanilla whey powder</span><br />
<span style="font-family: Verdana, sans-serif; font-size: large;">2 C oats</span><br />
<span style="font-family: Verdana, sans-serif; font-size: large;">1 C dried apricots (snipped into quarters with kitchen shears)</span><br />
<span style="font-family: Verdana, sans-serif; font-size: large;">1/2 C sliced almonds (or similar nuts)</span><br />
<span style="font-family: Verdana, sans-serif; font-size: large;">Nonstick cooking spray</span><br />
<span style="font-family: Verdana, sans-serif; font-size: large;"><br /></span>
<span style="font-family: Verdana, sans-serif; font-size: large;">Directions:</span><br />
<br />
<ol>
<li><span style="font-family: Verdana, sans-serif; font-size: large;">Heat oven to 350 degrees.</span></li>
<li><span style="font-family: Verdana, sans-serif; font-size: large;">Beat together first seven ingredients.</span></li>
<li><span style="font-family: Verdana, sans-serif; font-size: large;">Add dry ingredients and mix well.</span></li>
<li><span style="font-family: Verdana, sans-serif; font-size: large;">Fold in dry fruit and nuts.</span></li>
<li><span style="font-family: Verdana, sans-serif; font-size: large;">Thoroughly spray a 9 X 13 glass baking dish with nonstick spray.</span></li>
<li><span style="font-family: Verdana, sans-serif; font-size: large;">Spread batter evenly in sprayed pan.</span></li>
<li><span style="font-family: Verdana, sans-serif; font-size: large;">Bake 30 minutes or until toothpick comes out clean.</span></li>
<li><span style="font-family: Verdana, sans-serif; font-size: large;">Cut into 24 bars.</span></li>
<li><span style="font-family: Verdana, sans-serif; font-size: large;">Store in a covered container or glass cookie jar. </span></li>
</ol>
<br />
<span style="font-family: Verdana, sans-serif; font-size: large;"><br /></span>
<span style="font-family: Verdana, sans-serif; font-size: large;">Note: each cookie contains approximately 128 calories and packs a powerful protein punch!</span><br />
