Lazy Daisy Lasagna

Ingredients:

1 bag (25 oz.) frozen ravioli (cheese, meat, or cheese & spinach)
1 lb. ground beef
3 cans (15 oz.) of diced or crushed tomatoes 
Fresh or dried basil
1 Tablespoon of Italian Seasoning
2 cloves garlic
1 teaspoon of onion powder
4 cups grated cheese (mozzarella, or a mixture of your favorite cheeses)

Directions:

1. In a Dutch oven or large sauce pot, brown ground beef -- drain fat.
2. Add tomatoes and spices (except for basil).
3. Using a 6-quart slow cooker -- cover the bottom with your tomato/beef mixture.
4. Place a layer of ravioli over sauce. Sprinkle in basil.
5. Then add a layer of cheese.
6. Continue to layer in this fashion until ravioli is used up (usually 3 layers).
7. End with a layer of sauce and a sprinkling of cheese.
8. Cover and cook on low for 4-5 hours.
9. Turn off crock pot and allow your lasagna to rest for 15-45 minutes.
10. Delicious served with crusty bread and tossed salad for a quick & easy meal that looks like you spent hours on it!

Lasagna

1 pound lasagna noodles -- dry
8 ounces ground beef, extra lean -- cooked
1 can/jar spaghetti sauce -- diluted with
1 can/jar water
3/4 teaspoon garlic -- minced
1/2 teaspoon basil
1/4 teaspoon black pepper
3/4 teaspoon oregano
1 1/3 tablespoons parsley

1 pound cottage cheese
6 eggs
1 pound mozzarella cheese -- grated

1. Day before serving:
Cook ground beef and add to spaghetti sauce with water and spices--set aside.
Crack eggs and mix with cottage cheese-- set aside.
Layer lasagnas as follows: (makes 1 -- 13X9 pan)
sauce, noodles(use dry), sauce, egg mix, mozzarella, noodles - continue until 4th layer of noodles - end with a generous layer of sauce - be sure all edges of pasta are covered by sauce.

Cover pan with paper and foil and refrigerate over night.

Next day: bake at 350 for 1 hour. Cut 4X3(12). Serve.

NOTES : Before serving drizzle with tomato juice and sprinkle with grated Parmesan cheese. Serve with extra sauce, crusty bread and a salad.

NOTES II : To make vegetable lasagna, omit meat and layer in veggies of choice (suggestions -- zucchini, mushrooms, spinach, eggplant, etc.)

Baked Stuffed Manicotti

Baked Stuffed Manicotti

1 pound manicotti
2 cups cheddar cheese -- grated
2 pounds ricotta cheese
1/2 cup parmesan cheese -- grated
1/4 cup parsley
1/2 teaspoon pepper
1 teaspoon salt
2 cups spaghetti sauce
----------------------------
1. Cook manicotti
2. Drain & Cool
3. Combine cheeses, add parsley, salt, & pepper - mix thoroughly.
4. Spoon mixture into cooked & cooled manicotti.
5. Spread thin layer of sauce into bottom of lasagna pan. Arrange manicotti in a single layer over sauce.
6. Spread with remaining sauce.
7. Cover with foil & bake at 350 for about 40 min.
8. Remove foil and bake for 15 more minutes. Serve.-----------------------------------------
