Quinoa/Kale Patties


2 ½ cups cooked quinoa, cooled
4 cups kale or spinach, cleaned, deveined, & chopped small
3 large eggs, beaten
1 tsp sea salt
1 small yellow onion, diced 
½ cup chives, chopped
½ cup Parmesan, grated
3 cloves garlic, minced
1 cup finely ground bread crumbs (use gluten free breadcrumbs to make this dish gluten free or pork rinds to lower carbs)
2 Tbsp olive oil plus more for frying

1. Combine quinoa, eggs, Parmesan, chives and salt in medium mixing bowl.
2. Heat 2 Tbsp olive oil in skillet on medium heat then sweat onions and garlic, approximately 3 minutes. Add kale to skillet and cook until kale is bright green and soft.
3. Add kale mixture to quinoa mixture, then add breadcrumbs and stir to combine.
4. Place large clean skillet on medium heat and add enough oil to coat bottom of pan.  Form patties using ½ cup of quinoa mixture and place patties in skillet being careful not to overcrowd the pan. 
5. Fry until golden brown on each side, approximately 5 minutes per side.
Remove patties, drain on paper towel and serve. 
6. Makes: 10 patties

Note: okay to use frozen chopped spinach, thawed in the microwave.

Turkey Club Burrito

6 each flour tortilla -- Whole Wheat
6 ounces turkey breast
6 ounces ham
6 ounces american cheese -- low Fat
3 ounces lettuce -- shredded
---------------------------------------------
1. Assemble sandwiches -- each containing 1 slice of ham, 1 slice turkey, 1 slice of cheese, & about 1/2 oz. of shredded lettuce. Roll and serve with mayo & mustard on the side.

Healthy Dog Snacks

1 3/4 cups wheat flour
2 teaspoons wheat germ, toasted
1/2 cup brown sugar -- or real maple syrup
1/4 cup sesame seeds
1 lemon peel -- or orange
1/2 teaspoon butter -- or Veg. shortening
1/2 cup walnuts -- ground
1/2 teaspoon vanilla extract

1. Combine all ingredients.
2. Knead until well blended.
3. Divide into 6 parts.
4. Roll each part into a log and wrap loosely in waved paper. Freeze.
5. When needed, thaw and slice the roll. (slices should be about 1/2" thick)
6. Bake cookies on an ungreased cookie sheet for about 12 minutes at 375°.
7. Each roll will make 6 cookies.

NOTES : Any type of nut or seed can replace the walnuts in this recipe.

Favorite Dog Biscuits


Favorite Dog Biscuits

Yield: 12 Servings

2 1/2 Cup whole-wheat flour
1/2 Cup powdered milk
1/2-teaspoon salt
1/2-teaspoon garlic powder
1-teaspoon brown sugar
6 Tablespoons butter *NOTE: margarine, shortening, vegetable oils, bacon fat, or meat juices may be used.
1 egg, beaten
1/2 Cup ice water

1. Combine the flour, milk, salt, garlic powder and sugar.
2. Cut in butter until mixture resembles cornmeal – a heavy-duty fork or pastry blender works well for this.
3. Mix in egg then add enough ice water to make a ball.
4. Pat dough down or roll out to 1/2 inch thick.
5. Cut out shapes with a cookie or biscuit cutter and bake on a lightly oiled cookie sheet for 25 minutes at 350ยบ.
6. Remove from oven and cool on a wire rack.

NOTE from Louise: To vary the flavor and texture, at the time the egg is added, add any of the following: 1 cup pureed cooked green vegetables or carrots; 6 tablespoons whole wheat or rye kernels; 3 tablespoons liver powder; a small jar of any baby food meat.

Remembrances: During the holidays when our kitchen was very quiet and students wanted to learn new methods like rolling and cutting . . . these were perfect to work on.  The results were usually dropped off at area dog shelters, but students were allowed to keep at least a dozen or so of the biscuits to bring home to show off to their peers -- and of course to feed them to any pooches waiting in the wings.
