Healthy Eater's Individual Apple Raspberry Pie

"An Apple A Day Keeps The Doctor Away!"

Cliche I know but this recipe helps me get some very healthy fruit into my diet in a most pleasant way.

Needs: 

  1. Microwave-safe Pyrex ramekin dish
  2. Saucer
  3. Measuring spoons
  4. Paring knife
  5. Microwave
Ingredients:
  • 1 Apple
  • 2 packets Splenda (or other sugar substitute)
  • 1/2 teaspoon cornstarch (or tapioca)
  • Sprinkles of nutmeg, cinnamon, & ginger (or whatever spices you prefer)
  • a few drops of butter extract
  • 1/8 cup of frozen (or fresh)raspberries

Prep:
  1. Place dry ingredients into bottom of ramekin and mix with spoon.
  2. Drizzle with butter extract and berries.
  3. Core apple and slice into dish with remaining ingredients.
  4. Cover with a saucer and microwave on "HIGH" for 2 minutes.
  5. Stir and let set for a few minutes -- dig in.

NOTE: This tastes too good to be good for you!
Okay to substitute any kind of berries or fruits to add variety.

Apple Crisp

Apple Crisp

Serving Size : 8

8 medium apples -- peeled and sliced
1 tablespoon orange juice
1/2 cup all-purpose flour
1 cup brown sugar
1 cup rolled oats
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1/2 cup butter

1. Place apple slices in two quart baking dish. Sprinkle with orange juice.
2. Combine flour, sugar, oats, cinnamon, and nutmeg. Cut butter into one-inch chunks. Blend into dry ingredients, using a pastry blender or fork. When crumbly, sprinkle over apples. Bake at 375 degrees for 15 minutes. Turn oven down to 350 degrees and bake for 30 minutes more.

Serving Ideas : Serve warm with vanilla ice cream or whipped cream.

Apple BlackBerry Cobbler


Apple BlackBerry Cobbler

1 can apple slices -- canned (or applesauce)
1 5/8 cups blackberries, frozen or fresh
3/4 cup sugar
3/8 teaspoon nutmeg
1 package yellow cake mix
3/8 cup walnuts
1/2 cup margarine -- melted
----------------------------
1. Spray Cake Pan
2. Arrange undrained apple slices in the bottom of pan
3. Sprinkle with blackberries, Sugar, nutmeg, cake mix, & nuts -- in that order.
4. Drizzle melted margarine over mixture.
5. Bake at 350 degree oven for 1 hour. Serve

Summer Fruit Salad

1 can pear -- slices
1/4 cup maraschino cherry -- juice
1 cup maraschino cherries
1 can mixed fruit
1 package strawberries, frozen -- whole
2 packages vanilla pudding mix -- instant

1. combine all fruits AND their liquids in a large stainless steal bowl. Sprinkle with pudding mix and stir well. Refrigerate covered overnight.

Steve's Microwaved Fruit Pie Filling


Steve's Microwaved Fruit Pie Filling
Recipe By : Steve C. - This recipe was Steve C.'s famous TurnOver Filling!

4 cups strawberries -- * see note
1 cup sugar
1 lemon peel -- (from 1 lemon grated)
1 lemon juice -- (juice of one lemon)
1/4 cup cornstarch
1/2 teaspoon nutmeg
1/8 teaspoon sea salt
1/2 teaspoon vanilla extract

1. In a plastic or glass bowl combine fruit, sugar, lemon zest, lemon juice, cornstarch, and nutmeg.
2. Microwave, uncovered, on high for 3 minutes.
3. Stir well and microwave 3-4 minutes more or until thick and glossy like prepared pie filling.
4. Stir in vanilla and cool.
5. Recipe can be used as is in tart shells or cooked again in pies or turnovers.

Serving Ideas: Use with favorite pie crust recipe for pies, tarts, or turnovers.

NOTES: Any type of fresh or frozen fruit can be used here, some suggestions would be: raspberries, blackberries, blueberries, peaches, apricots, rhubarb, pears, apples, or cherries.
