Pina Colatta Pie (4 points/serving)


Pina Colatta Pie (4 points/serving)

2 c canned crushed pineapple, no sugar added
1 T unflavored gelatin
Artificial sweetener to equal 1 teaspoon sugar
1/4 c cold water
1 t cinnamon
1 t vanilla extract
1/4 t coconut extract
Juice of 1/2 fresh lemon

Drain pineapple and put juice in saucepan with cinnamon, vanilla, coconut extract, sweetener and lemon juice and heat. Soften gelatin in cold water; then add to heated mixture to dissolve. Add pineapple. Pour into large pie pan. Add topping.

Topping:

1/3 c non-fat dry milk
artificial sweetener to equal 4 t sugar or to taste
nutmeg to taste

Put all ingredients into sifter and sift over pie. Spray with water and put under broiler to brown. Watch carefully. Chill. Divide evenly. Makes 4 serving.

Each serving equals: 1 s fruit, 1/2 s something extra, 1/4 s milk
