Louise's Easy Blackberry Cobbler

1/2 Cup Butter or Margarine
2 Cups Flour
2 Cups Milk
1+1/2 Cups Sugar
4 teaspoons of baking powder
1 Pound of frozen or Fresh Blackberries
nutmeg and brown sugar

1. Spray a 13"X9" casserole dish with non-stick spray.
2. Pre-heat oven to 350 F.
3. Place margarine in dish and set dish in the oven to melt butter.
4. Mix flour, sugar, milk, and baking powder and pour over melted butter (batter will be thin).
5. Sprinkle berries over batter and sprinkle all with nutmeg and a small amount of brown sugar. Bake for about 45-60 minutes until the cobbler has "set."
6. Serve warm or cold.

Mini Meatloaves

1/2 cup milk
2 egg
2 pounds lean ground beef
1/2 cup bread crumbs
1/2 tablespoon ranch salad dressing -- mix - dry
2 tablespoons worcestershire sauce
------------------------------------------
1. Beat milk and eggs in large mixing bowl -- electric, use hook.
2. Add ground beef, bread crumbs, and salad dressing.
3. Mix with hook until well blended.
4. Scoop with #12 scoop onto papered cake pans.
5. Brush loaves with worcestershire sauce and bake uncovered at 350 for 35-45 minutes. Test with strip for doneness.
6. Serve

Hot Dog Toasties

1 pound turkey frankfurters
8 slices wheat bread
4 ounces american cheese
1 1/8 ounces margarine -- melted
mustard
------------------------

1. Steam hot dogs.
2. Spread each bread slice with mustard - top with a slice of cheese and one frank.
3. Fold bread over to form a triangle. Secure with tooth pick. Brush with melted butter and cook in very hot oven -400-500 degrees until brown.

White Chili


White Chili

2 2/3 cups chicken broth
1 can great northern beans
2 2/3 tablespoons onion flakes
2 teaspoons garlic -- minced
1 can green chiles -- canned
2 teaspoons oregano
2 teaspoons cumin
1 1/3 dashes cloves, ground
1 dash cayenne pepper
2 teaspoons cilantro
1 1/3 tablespoons chili powder
1 red bell pepper -- diced
2 pounds chicken -- cooked & diced
3 tablespoons cornstarch
1 1/3 cups cold water

1. Combine all ingredients exept for cornstarch and cold water. Heat to boiling - fold in a slurry of cornstarch and cold water. Cook for about 30 minutes, Serve.

6 tablespoons margarine or butter
2 tablespoons worcestershire sauce
1 1/2 teaspoons seasoned salt
3/4 teaspoon garlic powder
1/2 teaspoon onion powder
3 cups corn chex® cereal
3 cups rice chex® cereal
3 cups wheat chex® cereal
1 cup mixed nuts
1 cup pretzels
1 cup Cheerios

1. Heat oven to 250°. Melt margarine in large roasting pan in oven.
2. Stir in seasonings. Gradually stir in remaining ingredients until evenly coated.
3. Bake 1 hour, stirring every 15 minutes. Spread on paper towels to cool.
4. Store in airtight container.
5. Yield 12 cups.

Microwave Directions: Melt margarine in large microwavable bowl uncovered on High. Stir in seasonings. Gradually stir in remaining ingredients until evenly coated. Microwave uncovered on High 5 to 6 minutes, thoroughly stirring every 2 minutes. Spread on paper towels to cool. Store in airtight container.
Important: Because microwaves cook differently, time is approximate.

Louise’s Soft Molasses Cookies
Yield 5 Dozen

Ingredients:
1 Cup Shortening
½ Teaspoon Salt
3 Teaspoons Baking Soda
2 Teaspoons Ginger
2 Teaspoons Cinnamon
½ Teaspoon Allspice
½ Teaspoon Cloves
1 Cup Sugar
1 Cup Molasses
1 Egg
4 ¾ Cup Flour
¾ Cup Double strength cold coffee

Directions:
1. Heat oven to 375ยบ
2. Cream together first seven ingredients.
3. Blend in molasses and egg
4. Add flour alternately with the coffee
5. Drop from teaspoon onto lightly greased cookie sheets about 2” apart.
6. Bake 15 minutes or until done.
