Louise’s Soft Molasses Cookies


Louise’s Soft Molasses Cookies
Yield 5 Dozen

Ingredients:
1 Cup Shortening
½ Teaspoon Salt
3 Teaspoons Baking Soda
2 Teaspoons Ginger
2 Teaspoons Cinnamon
½ Teaspoon Allspice
½ Teaspoon Cloves
1 Cup Sugar
1 Cup Molasses
1 Egg
4 ¾ Cup Flour
¾ Cup Double strength cold coffee

Directions:
1. Heat oven to 375º
2. Cream together first seven ingredients.
3. Blend in molasses and egg
4. Add flour alternately with the coffee
5. Drop from teaspoon onto lightly greased cookie sheets about 2” apart.
6. Bake 15 minutes or until done.

  2. I made this last weekend and we had soup for a week! Makes a lot and its got great flavor.Next time I will add the barely later on because it got a little too mushy for my taste. Marion
