Chicken Mulligatawny Soup

Chicken Mulligatawny Soup

1 onion -- chopped
2 stalks celery -- chopped
1 clove garlic -- minced
1  apple -- diced
1 quart chicken broth
1 pound chicken -- diced
1/2 teaspoon curry powder
1/4 teaspoon white pepper
1/4 cup brown rice
1 teaspoon parsley, freeze-dried

1. Saute onions, celery, & garlic in a large soup pan sprayed with non-stick spray until onions are soft.
2. Add remaining ingredients, taste for seasoning. Serve.
